Just outside the village of Monze, close to Carcassone, Chateau Carbonac is a wine-growing estate with a single stretch of 33 hectares wherer they produce a wine known as the nectar of Corbières. The old, tall and well-preserved square tower of this former nunnery still stands. This red wine has intense aromas of ripe dark fruit and spice. On the palate, this wine is warming and rich with perfectly integrated tannins. Try with game cooked in sauce and firm French cheeses.
